Cornflake Chicken
This is one of the standard recipes in our house and one I have been cooking since I was eight years old. My wife loves it and it is super, super simple.
Cornflake Chicken

- 4 to 6 chicken breasts
- 4 cups cornflakes
- 1 stick butter
- 2 tbsp cajun seasoning
Instructions
- Preheat oven to 350 degrees.
- Oil a cassarole dish large enough to hold the number of chicken breasts you are preparing.
- Place the cornflakes in a gallon sealable bag and smash to bits.
- Place the butter in a bowl, cover in the cajun seasoning, and melt in a microwave.
- Dip the chicken breasts in the butter, then the cornflakes, then place in the casserole dish.
- Cover with the excess cornflakes.
- Pour the remaining butter and seasoning on top of the cornflakes.
- Bake for 50 minutes to one hour, until done.
